How To Make Watermelon Preserves

- 4 cups of watermelon, diced
- 1 cup of sugar
- 1 lemon, zest and juice
- 1 tsp of vanilla extract
Instructions

In a large saucepan, combine the diced watermelon, sugar, lemon zest, and lemon juice.

Bring the mixture to a boil over medium heat, stirring occasionally.

Reduce the heat to low and simmer for 30-40 minutes, or until the mixture has thickened.
