Ingredients

  • 4 cups of watermelon, diced
  • 1 cup of sugar
  • 1 lemon, zest and juice
  • 1 tsp of vanilla extract

Instructions

  1. In a large saucepan, combine the diced watermelon, sugar, lemon zest, and lemon juice.

  2. Bring the mixture to a boil over medium heat, stirring occasionally.

  3. Reduce the heat to low and simmer for 30-40 minutes, or until the mixture has thickened.

  4. Remove from heat and stir in the vanilla extract.

  5. Transfer the preserves to a jar and let cool completely before storing in the refrigerator.
