How To Make Mince Pie Cookies
These delicious cookies are a festive twist on classic mince pies. They are filled with a sweet and spicy mincemeat filling and topped with a buttery cookie crust.

Ingredients
- 1 cup all-purpose flour
- 1/4 cup cold unsalted butter, cubed
- 1/4 cup granulated sugar
- 1/2 cup mincemeat filling
- 1 egg yolk
- 1/2 tsp vanilla extract
- Powdered sugar, for dusting
Instructions

Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

In a large bowl, combine the flour, butter, and granulated sugar. Use your fingers to rub the butter into the flour until the mixture resembles breadcrumbs.

In a separate bowl, mix together the mincemeat filling, egg yolk, and vanilla extract.

Add the mincemeat mixture to the flour mixture and stir until a dough forms.

Roll out the dough on a lightly floured surface to about 1/4 inch thickness. Use a round cookie cutter to cut out circles.

Place the circles onto the prepared baking sheet and bake for 12-15 minutes, or until golden brown.
