These delicious cookies are a festive twist on classic mince pies. They are filled with a sweet and spicy mincemeat filling and topped with a buttery cookie crust.

Preparation: 20 minutes
Cooking: 15 minutes
Total: 35 minutes

Serves:

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup cold unsalted butter, cubed
  • 1/4 cup granulated sugar
  • 1/2 cup mincemeat filling
  • 1 egg yolk
  • 1/2 tsp vanilla extract
  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

  2. In a large bowl, combine the flour, butter, and granulated sugar. Use your fingers to rub the butter into the flour until the mixture resembles breadcrumbs.

  3. In a separate bowl, mix together the mincemeat filling, egg yolk, and vanilla extract.

  4. Add the mincemeat mixture to the flour mixture and stir until a dough forms.

  5. Roll out the dough on a lightly floured surface to about 1/4 inch thickness. Use a round cookie cutter to cut out circles.

  6. Place the circles onto the prepared baking sheet and bake for 12-15 minutes, or until golden brown.

  7. Remove from the oven and let cool on a wire rack. Dust with powdered sugar before serving.
