Serves:
Ingredients
- 2 cups heavy cream
- 1 cup milk
- 1 cup granulated sugar
- 4 egg yolks
- 1 tsp vanilla extract
- 2 apples, peeled and diced
- 1/2 cup caramel sauce
Instructions
-
In a saucepan, heat the heavy cream, milk, and 1/2 cup of sugar over medium heat, stirring occasionally until it begins to simmer. Remove from heat.
-
In a separate bowl, whisk together the egg yolks and remaining 1/2 cup of sugar until well combined.
-
Slowly pour the hot cream mixture into the egg yolks, whisking constantly to prevent curdling.
-
Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon, about 10 minutes. Do not let it boil.
-
Remove from heat and stir in the vanilla extract. Let the mixture cool completely.
-
Once cooled, pour the mixture into an ice cream maker and churn according to manufacturer’s instructions.
-
During the last few minutes of churning, add the diced apples and caramel sauce. Continue churning until the ice cream reaches a soft serve consistency.
-
Transfer the ice cream to a lidded container and freeze for at least 4 hours, or until firm.
-
Serve the caramel apple ice cream in bowls or cones and enjoy!
