How To Make White Forest Meringue Roulade
A delicious and light dessert made with fluffy meringue, filled with whipped cream and cherries, and dusted with chocolate shavings.

Ingredients
- 4 large egg whites
- 200g caster sugar
- 1 tsp cornstarch
- 1 tsp white vinegar
- 200ml heavy cream
- 1 tsp vanilla extract
- 200g cherries, pitted and halved
- 50g dark chocolate, shavings
Instructions

Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.

In a clean bowl, whisk the egg whites until stiff peaks form.

Gradually add the sugar, cornstarch, and vinegar to the egg whites while continuing to whisk until glossy and stiff.

Spread the meringue mixture onto the prepared baking tray, forming a rectangle shape.

Bake in the preheated oven for about 20-25 minutes or until the meringue is firm and lightly golden.

Remove from the oven and allow to cool completely.

In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form.

Spread the whipped cream over the cooled meringue, leaving a small border around the edges.

Sprinkle the cherries over the whipped cream.

Gently roll up the meringue from one short end, using the parchment paper to help lift and roll.

Transfer the rolled meringue onto a serving platter.

Dust with chocolate shavings on top.
