Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 slices prosciutto
  • 4 fresh figs, quartered
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp dried thyme

Instructions

  1. Preheat the oven to 400°F.

  2. Cut a pocket in each chicken breast and stuff with fig quarters.

  3. Wrap each chicken breast with a slice of prosciutto.

  4. Brush each chicken breast with olive oil and sprinkle with salt, pepper, and thyme.

  5. Bake for 25 minutes or until chicken is cooked through.
