A deliciously sweet and creamy ice cream made with fresh figs and honey.
Serves:
Ingredients
- 1 cup fresh figs, diced
- 1/2 cup honey
- 2 cups heavy cream
- 1 cup whole milk
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- Pinch of salt
Instructions
-
In a medium saucepan, combine diced figs and honey. Cook over medium heat, stirring occasionally, until figs have softened and mixture has thickened slightly, about 10 minutes.
-
Remove from heat and let cool for a few minutes. Then, transfer mixture to a blender and blend until smooth.
-
In a separate saucepan, heat heavy cream and whole milk over medium heat. Add granulated sugar and stir until dissolved.
-
Remove from heat and stir in vanilla extract, pinch of salt, and the fig mixture.
-
Transfer mixture to a bowl and let cool to room temperature before covering and chilling in the refrigerator for at least 2 hours, or overnight.
-
Once chilled, pour mixture into an ice cream maker and churn according to manufacturer’s instructions.
-
Transfer churned ice cream to a container and freeze for at least 2 hours, or until ice cream has hardened.
-
Serve and enjoy!
