A deliciously healthy and creamy pudding made with fig newtons and chia seeds that is perfect for breakfast or snack.

Ingredients

  • 2 cups unsweetened almond milk
  • 1/2 cup chia seeds
  • 1/2 cup mashed fig newtons
  • 1 tbsp honey
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon
  • Pinch of salt
  • Sliced fresh figs and chopped nuts for toppings

Instructions

  1. In a mixing bowl, whisk together the almond milk, chia seeds, mashed fig newtons, honey, vanilla extract, cinnamon and salt.

  2. Transfer the mixture to 4 small jars or bowls. Cover and chill for at least 2 hours or overnight.

  3. Serve chilled, topped with sliced fresh figs and chopped nuts.
