How To Make Fig Newtons Ice Cream Sandwiches

The perfect summer treat, cool and creamy ice cream layered between classic Fig Newton cookies.

Ingredients

  • 8 Fig Newton cookies
  • 1 cup of vanilla ice cream

Instructions

  1. Allow the ice cream to soften at room temperature for about 10 minutes.

  2. Line a small baking dish with parchment paper, leaving enough overhang to use as handles.

  3. Place 4 Fig Newton cookies on the bottom of the prepared dish.

  4. Spread the softened ice cream evenly over the cookies.

  5. Top with the remaining 4 Fig Newton cookies.

  6. Freeze for at least 4 hours, or overnight.

  7. Use the parchment paper handles to remove the ice cream sandwich from the pan and cut into 4 equal portions.
