- 2 egg whites
- 1/2 cup granulated sugar
- 1/4 teaspoon cream of tartar
- 1/2 teaspoon vanilla extract

In a heatproof bowl, whisk together the egg whites, sugar, and cream of tartar.

Place the bowl over a pot of simmering water, making sure the bottom of the bowl doesn’t touch the water.

Whisk the mixture constantly for about 5 minutes, until the sugar has dissolved and the mixture is hot to the touch.

Remove the bowl from the heat and using an electric mixer, beat the mixture on high speed for about 7 minutes, or until stiff peaks form.

Add in the vanilla extract and beat for another minute to incorporate.
