Ingredients

  • 4 apples, peeled, cored, and diced
  • 1 tbsp lemon juice
  • 2 tsp grated ginger
  • 1/4 cup sugar
  • 1 cup heavy cream
  • 1/2 tsp vanilla extract
  • 8 ginger biscuits, crushed
  • Fresh mint leaves, for garnish

Instructions

  1. In a saucepan, combine the diced apples, lemon juice, grated ginger, and sugar. Cook over medium heat, stirring occasionally, until the apples are soft and tender, about 10 minutes. Remove from heat and let cool.

  2. In a mixing bowl, whip the heavy cream and vanilla extract until soft peaks form.

  3. In serving glasses or bowls, layer the crushed ginger biscuits, cooled apple mixture, and whipped cream. Repeat the layers until all the ingredients are used, ending with a layer of whipped cream.

  4. Garnish with fresh mint leaves. Serve immediately or refrigerate until ready to serve.
