How To Make Christmas Cake Cupcakes

- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, softened

- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup dried fruits (such as raisins, cranberries, or cherries)
- 1/4 cup chopped nuts (such as walnuts or almonds)
- 1/4 cup brandy (optional)
- 1/2 cup powdered sugar (for the glaze)
- Christmas-themed sprinkles (for decoration)
Instructions

Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.

In a mixing bowl, cream together the butter and granulated sugar until light and fluffy.

Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the butter mixture, alternating with the milk.

Fold in the dried fruits and nuts. If desired, soak them in brandy for added flavor beforehand.

Spoon the batter into the cupcake liners, filling each about 2/3 full.

Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cupcakes to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.

Prepare the glaze by mixing the powdered sugar with a small amount of water, adding more water as needed to achieve a drizzling consistency.
