  • 1 cup rolled oats
  • 1/2 cup shredded coconut
  • 1/4 cup cocoa powder
  • 1/4 cup honey
  • 1/4 cup coconut oil, melted
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a mixing bowl, combine the rolled oats, shredded coconut, cocoa powder, honey, melted coconut oil, vanilla extract, and salt. Stir until well combined.

  3. Gently fold in the chocolate chips.

  4. Use a cookie scoop or tablespoon to drop the mixture onto the prepared baking sheet, spacing them about 2 inches apart.

  5. Flatten each macaroon slightly with the back of a spoon.

  6. Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown.

  7. Remove from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
