  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup granulated sugar
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp baking soda
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a large bowl, whisk together almond flour, coconut flour, granulated sugar, baking soda, and salt.

  3. Add melted coconut oil and vanilla extract to the dry ingredients. Mix until well combined and a dough forms.

  4. Roll the dough into small balls and place them on the prepared baking sheet. Flatten each ball with the back of a fork to create a criss-cross pattern.

  5. Bake in the preheated oven for 10 minutes, or until the edges are golden brown.

  6. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
