  • 1 ¾ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

  2. In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt.

  3. In a separate large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla extract.

  4. Gradually add dry ingredients to the wet ingredients, mixing until just combined.

  5. Divide the dough into two discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

  6. On a floured surface, roll out dough to ¼ inch thickness. Use cookie cutters to cut out desired shapes.

  7. Transfer cookies to prepared baking sheets and bake in preheated oven for 8-10 minutes.

  8. Allow cookies to cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.

  9. Decorate with icing or sprinkles, if desired.
