- 2 cups rhubarb, diced
- 2 cups strawberries, sliced
- 1/2 cup granulated sugar
- 1 tbsp cornstarch
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 cup unsalted butter, cold and cubed
- 1/4 cup milk
- 1 tsp vanilla extract
- 1 cup heavy cream
- 2 tbsp powdered sugar
- 1 tsp orange zest
- 1 tsp vanilla extract
Instructions

Preheat the oven to 375°F (190°C).

In a large bowl, combine rhubarb, strawberries, granulated sugar, and cornstarch. Mix well to coat the fruit evenly. Transfer to a 9-inch baking dish.

In a separate bowl, combine flour, sugar, baking powder, and salt. Cut in butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Add milk and vanilla extract to the flour mixture. Stir until just combined. Drop spoonfuls of the dough onto the fruit mixture.

Bake in the preheated oven for 35-40 minutes, or until the fruit is bubbly and the cobbler topping is golden brown.

In a chilled bowl, whip the heavy cream with powdered sugar, orange zest, and vanilla extract until stiff peaks form.

Serve the warm rhubarb and strawberry cobbler with a dollop of orange cream on top.
