  • 1 cup of pecan halves
  • 1 cup of granulated sugar
  • 1/2 cup of brown sugar
  • 1/2 cup of heavy cream
  • 4 tablespoons of unsalted butter
  • 1 teaspoon of vanilla extract

Instructions

  1. Line a baking sheet with parchment paper.

  2. In a medium saucepan, combine the granulated sugar, brown sugar, heavy cream, and butter. Cook over medium heat, stirring constantly until the sugar has dissolved and the mixture comes to a boil.

  3. Continue cooking for 4-5 minutes, stirring occasionally, until the mixture reaches the soft ball stage (235°F on a candy thermometer).

  4. Remove the saucepan from the heat and stir in the pecan halves and vanilla extract.

  5. Working quickly, drop spoonfuls of the pecan mixture onto the prepared baking sheet.

  6. Let the pralines cool and harden at room temperature for about 20 minutes.

  7. Once cooled, transfer the pralines to an airtight container for storage or serve immediately.
