Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 2 tbsp granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/2 cup chopped pralines
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.

  2. In a separate bowl, whisk together the buttermilk, vegetable oil, vanilla extract, and eggs.

  3. Pour the wet ingredients into the dry ingredients and mix until just combined.

  4. Heat a non-stick skillet over medium heat and pour 1/4 cup of batter onto the skillet. Cook until bubbles form on the surface, then flip and cook for another minute. Repeat with the remaining batter.

  5. In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.

  6. To assemble the pancake cake, place one pancake on a serving plate and spread a layer of whipped cream on top. Sprinkle with chopped pralines. Repeat this process with the remaining pancakes, ending with a layer of whipped cream and pralines on top.

  7. Refrigerate for at least 2 hours before serving.

  8. Slice and enjoy!
