  • 200g dark chocolate, chopped
  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1/4 cup rum (or your choice of alcohol)
  • 1/2 cup all-purpose flour
  • 1/4 cup cocoa powder
  • Pinch of salt
  • Whipped cream or ice cream, for serving

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 8-inch round cake pan and line the bottom with parchment paper.

  2. In a heatproof bowl, melt the chopped chocolate and butter together over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.

  3. In a separate mixing bowl, whisk together the sugar and eggs until pale and frothy. Gradually pour in the melted chocolate mixture, whisking constantly.

  4. Stir in the rum, flour, cocoa powder, and salt until just combined. Be careful not to overmix.

  5. Pour the batter into the prepared cake pan and smooth the top evenly.

  6. Bake in the preheated oven for 40 minutes, or until the center is set and a toothpick comes out with a few moist crumbs.

  7. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, carefully invert the cake onto a serving plate and remove the parchment paper.

  8. Allow the cake to cool completely before serving. Serve slices of the sunken drunken chocolate cake with a dollop of whipped cream or a scoop of ice cream.
