  • 2 eggs
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1/4 cup milk
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a large mixing bowl, whisk together the eggs, sugar, vegetable oil, milk, lemon juice, lemon zest, and vanilla extract.

  3. In a separate bowl, combine the flour, baking powder, and salt.

  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  5. Pour the batter into a greased 8-inch round cake pan.

  6. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.

  7. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

  8. Once cooled, dust the top of the cake with powdered sugar.

  9. Slice and serve.
