Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1/2 cup buttermilk
  • 1 tsp vanilla extract
  • 1/2 cup boiling water
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1 cup canned cherries, pitted and halved
  • 1/4 cup chocolate shavings

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  2. In a mixing bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, and granulated sugar.

  3. Add in the vegetable oil, buttermilk, and vanilla extract. Mix until well combined.

  4. Gradually add in the boiling water, mixing until the batter is smooth.

  5. Pour the batter into the prepared cake pan and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

  6. Allow the cake to cool completely before removing it from the pan.

  7. In a separate mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

  8. Cut the cake horizontally into two layers. Spread a layer of whipped cream on the bottom layer and top with cherries. Place the second layer on top.

  9. Frost the entire cake with the remaining whipped cream and garnish with chocolate shavings and additional cherries.

  10. Serve and enjoy!
