Ingredients

  • 2 oranges, zest and juice
  • 1/2 cup of unsalted butter, softened
  • 1 cup of granulated sugar
  • 2 eggs
  • 1 and 1/2 cups of all-purpose flour
  • 1 tsp of baking powder
  • 1/4 tsp of salt
  • 1/4 cup of freshly chopped coriander leaves
  • 1/2 cup of powdered sugar

Instructions

  1. Preheat the oven to 350°F (180°C) and grease a 9-inch (23 cm) round cake pan.

  2. In a bowl, cream together the softened butter and granulated sugar until light and fluffy.

  3. Beat in the eggs, one at a time, until well incorporated.

  4. In a separate bowl, whisk together the flour, baking powder, and salt.

  5. Gradually add the dry mixture to the butter mixture, alternating with the orange juice and zest. Mix until just combined.

  6. Fold in the freshly chopped coriander leaves.

  7. Pour the batter into the greased cake pan and smooth the top with a spatula.

  8. Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.

  9. While the cake is baking, prepare the orange drizzle by mixing the powdered sugar with the remaining orange juice until smooth.

  10. Once the cake is out of the oven, poke holes all over the top using a toothpick or skewer.

  11. Drizzle the orange mixture over the warm cake, allowing it to soak in.

  12. Let the cake cool completely in the pan before serving.

  13. Serve slices of the orange and coriander drizzle cake with a sprinkle of powdered sugar and extra coriander leaves, if desired.
