Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 1/4 cup milk
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts
  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour four mini cake pans.

  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.

  3. Beat in the eggs, one at a time, followed by the vanilla extract.

  4. In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the milk.

  5. Fold in the dried cranberries and chopped walnuts.

  6. Divide the batter equally among the mini cake pans. Smooth the tops with a spatula.

  7. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

  8. Remove from the oven and let the cakes cool in the pans for 10 minutes. Then transfer them to a wire rack to cool completely.

  9. Once cooled, dust the tops of the mini cakes with powdered sugar before serving.
