How To Make Jamaican Ginger Beer & Pineapple Bundt Cake

Ingredients
- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp ground ginger
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup Jamaican ginger beer
- 1/2 cup crushed pineapple, drained
Instructions

Preheat the oven to 350°F (175°C). Grease and flour a bundt cake pan.

In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground ginger. Set aside.

In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

Beat in the eggs, one at a time, then stir in the vanilla extract.

Gradually add the dry ingredients to the wet ingredients, alternating with the ginger beer. Mix until just combined.

Fold in the crushed pineapple.

Pour the batter into the prepared bundt pan and smooth the top.

Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let cool in the pan for 10 minutes. Then, transfer the cake to a wire rack to cool completely.
