  • 200g dark chocolate, chopped
  • 100g unsalted butter
  • 150g almond flour
  • 150g granulated sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 180°C (350°F). Grease and line a 9-inch round cake pan with parchment paper.

  2. In a heatproof bowl, melt the chocolate and butter together over a pan of simmering water. Stir until smooth and set aside to cool slightly.

  3. In a separate bowl, whisk together the almond flour and sugar. Add the eggs one at a time, whisking well after each addition.

  4. Pour in the melted chocolate mixture and vanilla extract. Stir until well combined.

  5. Pour the batter into the prepared cake pan and smooth the top with a spatula.

  6. Bake for 35 minutes or until a toothpick inserted into the center comes out with a few crumbs.

  7. Remove from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

  8. Once cooled, dust the top with powdered sugar before serving.
