Ingredients

  • 4 oz dark chocolate, chopped
  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup unsweetened cocoa powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 6-inch round cake pan.

  2. In a heatproof bowl, melt the dark chocolate and butter together over a pot of simmering water. Stir until smooth, then remove from heat and let cool slightly.

  3. In a separate bowl, whisk together the sugar, eggs, cocoa powder, salt, and vanilla extract.

  4. Pour the melted chocolate mixture into the egg mixture and whisk until well combined.

  5. Transfer the batter to the greased cake pan and smooth the top with a spatula.

  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.

  7. Remove from the oven and let the cake cool in the pan for 10 minutes. Then, carefully remove the cake from the pan and let it cool completely on a wire rack.

  8. Serve the flourless chocolate cake on its own or with a dusting of powdered sugar and a dollop of whipped cream.
