How To Make Honey Saffron Christmas Cake

Ingredients
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup honey
- 1/4 cup unsalted butter, melted
- 2 eggs
- 1/2 cup milk
- 1 tsp vanilla extract
- 1/2 tsp saffron strands
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/4 cup chopped nuts (optional)
- Powdered sugar, for dusting
Instructions

Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a small bowl, soak the saffron strands in 1 tbsp of warm milk for 10 minutes.

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.

In a separate bowl, beat the eggs. Add the melted butter, honey, milk, vanilla extract, and soaked saffron milk. Mix well.

Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Fold in the chopped nuts, if desired.

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the cake cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.

Once cooled, dust with powdered sugar before serving.
