Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup honey
  • 1/2 cup milk
  • 1 tsp almond extract
  • 1/2 cup sliced almonds, toasted

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.

  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

  3. In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the honey.

  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Stir in the almond extract.

  5. Divide the batter evenly between the prepared pans. Smooth the tops with a spatula.

  6. Bake for 22-25 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and allow to cool in the pans for 10 minutes. Transfer the cakes to a wire rack to cool completely.

  7. Once the cakes have cooled, place one cake layer on a serving plate. Spread a layer of frosting on top and sprinkle with toasted almonds. Top with the second cake layer and frost the sides and top of the cake. Decorate as desired.

  8. Slice and serve.
