Ingredients

  • 200g unsalted butter, softened
  • 200g caster sugar
  • 4 eggs
  • 200g self-raising flour
  • 1 tsp vanilla extract
  • 200g strawberry jam
  • 200ml double cream
  • Icing sugar for dusting

Instructions

  1. Preheat oven to 180°C (350°F). Grease and line two 8-inch round cake pans.

  2. In a large bowl, cream together the butter and sugar until light and fluffy.

  3. Beat in the eggs, one at a time, and mix well after each addition.

  4. Add the flour and vanilla extract, and fold until just combined. Do not overmix.

  5. Divide the batter evenly between the prepared cake pans.

  6. Bake for 25 minutes, or until a toothpick inserted into the center comes out clean.

  7. Remove the cakes from the pans and let them cool completely on a wire rack.

  8. Once cooled, spread the strawberry jam evenly over one cake layer.

  9. Whip the double cream until it thickens and spread it over the strawberry jam.

  10. Place the second cake layer on top and lightly dust with icing sugar.

  11. Slice and serve.
