Ingredients

  • 200g butter, softened
  • 200g caster sugar
  • 4 eggs
  • 200g self-raising flour
  • 2 tbsp milk
  • 150g strawberry jam
  • 150ml double cream
  • Icing sugar, for dusting

Instructions

  1. Preheat the oven to 180°C/350°F. Grease and line two 8-inch round cake tins.

  2. In a large mixing bowl, cream together the butter and sugar until pale and creamy.

  3. Beat in the eggs, one at a time, adding a spoonful of flour with each addition to prevent curdling.

  4. Fold in the remaining flour until fully combined, then stir in the milk to loosen the mixture.

  5. Divide the batter evenly between the prepared tins and smooth the tops with a spatula.

  6. Bake in the preheated oven for 20-25 minutes or until golden brown and a skewer inserted into the center comes out clean.

  7. Allow the cakes to cool in the tins for 5 minutes, then transfer them to a wire rack to cool completely.

  8. Once cooled, spread the strawberry jam over one of the sponges and top with the double cream. Place the second sponge on top.

  9. Dust with icing sugar before serving.
