Ingredients

  • 1 cup mixed dried fruits (such as raisins, cranberries, and dates)
  • 1/2 cup chopped nuts (such as walnuts or almonds)
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F (160°C) and grease a loaf pan.

  2. In a bowl, combine the dried fruits and chopped nuts. Set aside.

  3. In a separate bowl, cream together the softened butter and brown sugar.

  4. Add the eggs, one at a time, beating well after each addition.

  5. In another bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.

  6. Gradually add the dry ingredients to the butter mixture, alternating with the milk.

  7. Stir in the vanilla extract.

  8. Fold in the mixed dried fruits and nuts.

  9. Pour the batter into the greased loaf pan and smooth the top.

  10. Bake for 80-90 minutes, or until a toothpick inserted into the center comes out clean.

  11. Allow the fruitcake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

  12. Slice and serve.
