Ingredients

  • 1 1/2 cups of mixed dried fruits
  • 1/2 cup of orange juice
  • 1/2 cup of brown sugar
  • 1/4 cup of vegetable oil
  • 1 cup of all-purpose flour
  • 1/2 teaspoon of baking powder
  • 1/2 teaspoon of cinnamon
  • 1/4 teaspoon of nutmeg
  • 1/4 teaspoon of salt
  • 1/4 cup of chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.

  2. In a bowl, combine the dried fruits and orange juice. Let it sit for 10 minutes to allow the fruits to absorb the juice.

  3. In a separate bowl, mix the brown sugar and vegetable oil until well combined.

  4. In another bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.

  5. Gradually add the dry ingredients to the sugar and oil mixture, alternating with the soaked dried fruits. Mix until just combined. Fold in the chopped nuts, if using.

  6. Pour the batter into the prepared loaf pan and smooth the top.

  7. Bake for 1 hour, or until a toothpick inserted into the center comes out clean.

  8. Allow the fruitcake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

  9. Slice and serve the fruitcake. Enjoy!
