Ingredients
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 eggs
- 1/4 cup milk
- 1 tsp vanilla extract
- 1 cup mixed dried fruits (e.g. raisins, currants, chopped dates)
- 1/2 cup chopped nuts (e.g. walnuts, almonds)
- 1/4 cup brandy or rum (optional)
Instructions

Preheat the oven to 350°F (175°C). Grease a loaf pan and set aside.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a separate large bowl, cream together the softened butter and sugar until light and fluffy.

Beat in the eggs, one at a time, until well combined. Stir in the milk and vanilla extract.

Gradually add the flour mixture to the wet ingredients, mixing until just combined.

Fold in the mixed dried fruits and chopped nuts. If desired, stir in the brandy or rum.

Pour the batter into the greased loaf pan and smooth the top with a spatula.

Bake in the preheated oven for 1 hour, or until a toothpick inserted into the center comes out clean.
