Ingredients
- 1 cup mixed dried fruits (such as raisins, currants, chopped dates)
- 1/2 cup chopped nuts (such as almonds, pecans, walnuts)
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup butter, softened
- 2 eggs
- 1/4 cup brandy
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp cloves
- 1/4 tsp salt
Instructions

Preheat the oven to 325°F (165°C).

In a bowl, soak the dried fruits in brandy for 30 minutes.

In a separate bowl, cream together the butter and sugar until light and fluffy.

Beat in the eggs, one at a time, until well combined.

In a large bowl, combine the flour, baking powder, cinnamon, nutmeg, cloves, and salt.

Gradually add the dry ingredients to the butter mixture, mixing until just combined.

Stir in the soaked fruits and chopped nuts.

Pour the batter into a greased and lined loaf pan.

Bake for about 3 hours, or until a toothpick inserted into the center comes out clean.

Allow the fruitcake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Serve slices of the fruitcake on its own or with a dollop of whipped cream or vanilla ice cream.
