Ingredients

  • 1 cup of dried mixed fruit
  • 1/2 cup of raisins
  • 1/4 cup of chopped nuts
  • 1 cup of water
  • 1 cup of brown sugar
  • 1/2 cup of butter
  • 1 tsp of vanilla extract
  • 1 tsp of cinnamon
  • 1/2 tsp of nutmeg
  • 1/4 tsp of salt
  • 1 1/2 cups of all-purpose flour
  • 1 tsp of baking soda

Instructions

  1. In a large pot, combine the dried fruit, raisins, nuts, water, brown sugar, butter, vanilla extract, cinnamon, nutmeg, and salt. Bring to a boil.

  2. Reduce heat and simmer for 10 minutes, stirring occasionally.

  3. Remove from heat and let cool for 5 minutes.

  4. Preheat the oven to 325°F (163°C).

  5. In a separate bowl, whisk together the flour and baking soda.

  6. Add the flour mixture to the fruit mixture and stir until well combined.

  7. Pour the batter into a greased loaf pan.

  8. Bake in the preheated oven for 1 hour and 30 minutes, or until a toothpick inserted into the center comes out clean.

  9. Remove from the oven and let cool in the pan for 10 minutes.

  10. Transfer the fruitcake to a wire rack and let cool completely before serving.
