How To Make Sugar-Crunch Fruitcake

- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup milk
- 1 cup mixed dried fruits (such as raisins, cranberries, apricots)
- ¼ cup chopped nuts (such as almonds or walnuts)
- ¼ cup brown sugar
Instructions

Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.

In a large bowl, cream together the butter and granulated sugar until light and fluffy.

Beat in the eggs one at a time, then stir in the vanilla extract.

Gradually add the flour mixture to the butter mixture, alternating with the milk. Mix until just combined.

Fold in the dried fruits and nuts.

Pour the batter into the prepared cake pan, smoothing the top with a spatula.

Sprinkle the brown sugar evenly over the batter.

Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
