How To Make Dundee Cake

- 150g unsalted butter, softened
- 150g golden caster sugar
- 3 large eggs
- 225g self-raising flour
- 1 tsp baking powder
- Zest of 1 orange
- 50g blanched almonds
- 100g mixed dried fruits (such as raisins and currants)
Instructions

Preheat the oven to 180°C (350°F). Grease and line a 20cm round cake tin with parchment paper.

In a large mixing bowl, cream together the butter and sugar until light and fluffy.

Beat in the eggs, one at a time, mixing well after each addition.

Sift in the flour and baking powder, then fold it into the mixture until well combined.

Stir in the orange zest, almonds, and dried fruits, making sure they are evenly distributed.

Pour the mixture into the prepared cake tin and smooth the top with a spatula.

Bake in the preheated oven for 1 hour 30 minutes, or until a skewer inserted into the center comes out clean.

Remove the cake from the oven and allow it to cool in the tin for 10 minutes, then transfer it to a wire rack to cool completely.
