  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1/4 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon vinegar
  • 1/3 cup vegetable oil
  • 1 cup water

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.

  2. In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking soda, and salt.

  3. Make three wells in the dry ingredients and add the vanilla extract, vinegar, and vegetable oil to each well. Pour the water over everything.

  4. Stir the mixture until well combined and no lumps remain.

  5. Pour the batter into the prepared cake pan and smooth the top.

  6. Bake for 30 minutes or until a toothpick inserted into the center comes out clean.

  7. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

  8. Serve the Depression Cake as is or dust with powdered sugar, if desired.
