Ingredients

  • 2 cups of all-purpose flour
  • 1 cup of sugar
  • 1/2 cup of shredded coconut
  • 1/2 cup of butter, softened
  • 1/2 cup of milk
  • 2 eggs
  • 1 tsp of vanilla extract
  • 2 tsp of baking powder
  • 1/4 tsp of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a cake pan.

  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.

  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

  4. In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the milk.

  5. Fold in the shredded coconut until well combined.

  6. Pour the batter into the greased cake pan and smooth the top.

  7. Bake in the preheated oven for 30 minutes or until a toothpick inserted into the center comes out clean.

  8. Remove from the oven and let the cake cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.

  9. Once cooled, you can frost the cake with your favorite coconut frosting or sprinkle with powdered sugar. Enjoy!
