  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup coconut milk
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup shredded coconut

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  2. In a large mixing bowl, cream together the sugar and butter until light and fluffy.

  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

  4. In a separate bowl, combine the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the creamed mixture, alternating with the coconut milk.

  5. Fold in the shredded coconut.

  6. Pour the batter into the prepared cake pan and spread it evenly.

  7. Bake for 30 minutes or until a toothpick inserted into the center comes out clean.

  8. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.

  9. Once cooled, frost the cake with your favorite coconut frosting or sprinkle with powdered sugar.

  10. Slice and serve the coconut cake.
