Ingredients

  • 1/2 cup coconut flour
  • 1/2 cup sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 4 eggs
  • 1/4 cup coconut oil, melted
  • 1/4 cup coconut milk
  • 1 tsp vanilla extract
  • For the frosting:
  • 1/4 cup coconut cream
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F and grease a 6-inch cake pan.

  2. In a bowl, mix together the coconut flour, sugar, baking powder, and salt.

  3. Add the eggs, coconut oil, coconut milk, and vanilla extract, and whisk until smooth.

  4. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

  5. Let the cake cool completely before frosting.

  6. To make the frosting, whisk together the coconut cream, powdered sugar, and vanilla extract until smooth.

  7. Spread the frosting over the cooled cake and serve.
