  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup coconut milk
  • 1/2 cup shredded coconut
  • for the icing:
  • 1 1/2 cups powdered sugar
  • 2 tbsp coconut milk
  • 1/4 cup shredded coconut

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a loaf tin.

  2. In a mixing bowl, whisk together the flour, baking powder, and salt.

  3. In a separate bowl, cream together the butter and granulated sugar until light and fluffy.

  4. Beat in the eggs one at a time, followed by the vanilla extract.

  5. Gradually add the dry ingredients to the butter mixture, alternating with the coconut milk. Mix until just combined.

  6. Fold in the shredded coconut.

  7. Pour the batter into the prepared loaf tin and smooth the top.

  8. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

  9. Allow the cake to cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.

  10. In a small bowl, whisk together the powdered sugar and coconut milk until smooth. Drizzle the icing over the cooled cake and sprinkle with shredded coconut.

  11. Slice and serve the Snowy Coconut Loaf Cake.
