Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1/2 cup cherry preserves
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a round cake pan.

  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.

  3. In a separate large bowl, cream together the granulated sugar and softened butter until light and fluffy.

  4. Beat in the eggs, one at a time, followed by the vanilla extract.

  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.

  6. Pour half of the batter into the prepared cake pan and spread it out evenly.

  7. Spoon the cherry preserves onto the batter, leaving a small border around the edges.

  8. Sprinkle the dark chocolate chips over the cherry preserves.

  9. Pour the remaining batter over the chocolate chips and smooth out the top.

  10. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

  11. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

  12. Serve slices of the Cherry Chocolate Cake and enjoy!
