Ingredients
- 2 cups grated carrots
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 1/4 cup unsweetened applesauce
- 2 eggs
- 1/2 cup chopped walnuts (optional)
- Cream cheese frosting
Instructions

Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, and nutmeg.

In another bowl, beat sugar, oil, applesauce, and eggs until well combined. Gradually add the dry ingredients into the wet mixture and mix until just combined.

Fold in grated carrots and chopped walnuts (if using).

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Once the cake has cooled, frost with cream cheese frosting and decorate with additional grated carrots or walnuts, if desired.
