  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • ⅓ cup milk
  • 1 cup fresh or frozen blueberries
  • for streusel topping:
  • ¼ cup all-purpose flour
  • ¼ cup granulated sugar
  • 2 tbsp unsalted butter, cold and cubed
  • ½ tsp cinnamon
  • for the glaze:
  • ½ cup powdered sugar
  • 1 tbsp milk
  • ½ tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.

  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

  3. In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

  4. Gradually add the flour mixture to the butter mixture, alternating with the milk. Begin and end with the flour mixture.

  5. Gently fold in the blueberries.

  6. Pour the batter into the prepared cake pan and smooth the top.

  7. To make the streusel topping, mix together the flour, sugar, butter, and cinnamon until crumbly. Sprinkle evenly over the cake batter.

  8. Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center comes out clean.

  9. While the cake is baking, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract.

  10. Remove the cake from the oven and let it cool in the pan for 10 minutes. Drizzle the glaze over the warm cake.

  11. Serve the blueberry coffee cake warm or at room temperature.
