Ingredients

  • 1 cup cooked quinoa
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup almond meal
  • 1/2 cup granulated sugar
  • 1/4 cup melted coconut oil
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a round cake pan.

  2. In a blender or food processor, combine the cooked quinoa, cocoa powder, almond meal, sugar, coconut oil, eggs, vanilla extract, baking powder, and salt. Blend until smooth and well combined.

  3. Pour the batter into the prepared cake pan and smooth the top.

  4. Bake for 40 minutes or until a toothpick inserted into the center comes out clean.

  5. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  6. Serve slices of the cake as is or dust with powdered sugar, if desired.
