
How To Make Fresh BLT Spring Rolls
Lettuce, hickory smoked bacon, tomato slices, and a creamy avocado dipping sauce are what make these spring rolls a filling, on-the-go meal.

Ingredients
- 12Farmland® Hickory Smoked Bacon slices
- 6rice papers
- 6green leaf lettuce leaves
- 3roma tomatoes,thinly sliced
- 2avocados,halved, pitted, peeled
- 1cupfresh cilantro
- 2green onions,chopped
- 2tbsplime juice
- ½cupcoconut milk,chilled
- salt and pepper,to taste
Instructions

In a 12-inch skillet, cook the bacon on medium-high heat until browned and crisp. Remove to paper towels to drain.

Fill a large bowl with warm water. Dip 1 rice paper into water for a few seconds or just until moistened. Rice paper will still be firm but continue to soften during assembly. Place on work surface.

Top the rice paper with lettuce leaf. Arrange 2 bacon slices across the lower third of the rice paper, then top with tomato.

Fold the bottom of rice paper over the filling. Fold in the sides, leaving the top of the roll open, then roll up tightly. Repeat with the remaining rice papers, lettuce, bacon, and tomato slices.
Dipping Sauce:

Place the avocados, cilantro, green onions, and lime juice in a food processor. Cover and process for about 1 minute until smooth.

Add the coconut milk. Process for about 1 to 2 minutes more or until smooth. Season to taste with salt and pepper.

Serve spring rolls with dipping sauce, and enjoy!
