  • 8 eggs
  • 1/4 cup milk
  • 1/4 cup sugar
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 2 tbsp butter
  • Powdered sugar, for garnish

Instructions

  1. In a mixing bowl, whisk together eggs, milk, and sugar until well combined.

  2. Heat a large non-stick skillet over medium heat and melt 1 tbsp butter.

  3. Pour 1/4 of the egg mixture into the skillet and cook for 2-3 minutes, until the edges start to set.

  4. Sprinkle 1/4 cup of mixed berries on one half of the omelette.

  5. Fold the other half of the omelette over the berries and cook for another 1-2 minutes, until the berries are warmed through and the omelette is fully cooked.

  6. Repeat steps 3-5 for the remaining egg mixture and berries.

  7. Serve the berry omelettes hot, sprinkled with powdered sugar.
