  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. In a bowl, whisk together the eggs, salt, and black pepper.

  2. Heat olive oil in a non-stick skillet over medium heat.

  3. Add cherry tomatoes to the skillet and cook for 2 minutes until slightly softened.

  4. Pour the whisked eggs over the tomatoes and let it cook undisturbed for about 2 minutes until the edges are set.

  5. Sprinkle basil leaves and shredded mozzarella cheese on one half of the omelette.

  6. Using a spatula, fold the other half of the omelette over the filling and cook for an additional 2 minutes to melt the cheese.

  7. Gently slide the omelette onto a serving plate and cut into wedges.

  8. Serve hot and enjoy!
