How To Make Melting Tomato & Basil Omelette

Ingredients
- 8 eggs
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh basil leaves, chopped
- 1/2 cup shredded mozzarella cheese
Instructions

In a bowl, whisk together the eggs, salt, and black pepper.

Heat olive oil in a non-stick skillet over medium heat.

Add cherry tomatoes to the skillet and cook for 2 minutes until slightly softened.

Pour the whisked eggs over the tomatoes and let it cook undisturbed for about 2 minutes until the edges are set.

Sprinkle basil leaves and shredded mozzarella cheese on one half of the omelette.

Using a spatula, fold the other half of the omelette over the filling and cook for an additional 2 minutes to melt the cheese.
