  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 can (14 oz) red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 8 flour tortillas
  • Salt and pepper, to taste
  • Optional toppings: diced tomatoes, chopped cilantro, sour cream

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large skillet, brown the ground beef over medium heat until fully cooked. Drain any excess grease.

  3. Add the diced onion, minced garlic, cumin, chili powder, salt, and pepper to the skillet. Cook for an additional 5 minutes, until the onions are tender.

  4. Pour in half of the enchilada sauce and mix well with the beef mixture. Remove from heat.

  5. Spoon a generous amount of the beef mixture onto each tortilla and roll tightly. Place the rolled tortillas in a baking dish, seam-side down.

  6. Pour the remaining enchilada sauce over the rolled tortillas, spreading it evenly. Top with shredded cheddar cheese.

  7. Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.

  8. Remove from the oven and let cool for a few minutes before serving.

  9. Garnish with optional toppings such as diced tomatoes, chopped cilantro, and sour cream.
