Ingredients

  • 6 small flour tortillas
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup black beans, drained and rinsed
  • 1 cup salsa
  • 1 cup shredded Mexican blend cheese
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×9 inch baking dish.

  2. In a large skillet, brown the ground beef over medium heat. Add onion, garlic, chili powder, cumin, paprika, salt, and pepper. Cook until the onions are softened and the beef is cooked through.

  3. Layer 2 tortillas on the bottom of the baking dish. Spread half of the beef mixture over the tortillas. Top with half of the black beans, salsa, and cheese. Repeat with another layer.

  4. Bake in the preheated oven for 25 minutes or until the cheese is melted and bubbly.

  5. Garnish with chopped cilantro before serving.
